摘要 PROBLEM TO BE SOLVED: To provide a method for easily producing bread that has a white or light-colored crust and thin thickness, is extremely soft, has no greasiness in crumb and good meltability in the mouth even without using a specific additive and a specified apparatus. SOLUTION: The pullman type bread is produced by packing bread dough obtained by a common procedure in a bread mold, finally fermenting the dough, putting a lid on the mold, carrying out a steaming treatment at 95-110°C and keeping the inner temperature of the dough at≥90°C for at least three minutes. The steaming treatment is performed by packing the bread dough in the mold, finally fermenting the dough and steaming the bread mold with the lid by a steamer or storing the bread mold in a storage vessel with a lid charged with warm water or hot water, making the bread vessel not be directly contacted with the warm water or hot water and roasting the dough by a bakery oven in a state in which a lid is put on the opening part of the storage vessel.
