Prepg. an imitation or cooked meat prod. by immersing material in an aq. soln/dispersion contg. an edible water-sol. solute then cooking, in which immersion is carried out until sufficient solute has been absorbed that, after cooking, prod. is stable against microbial deterioration. Used in prodn. of pet foods with good taste, texture and long shelf life without refrigeration. Immersion is at 40 degrees-room temp. for 1-3 hrs. at -20 to -5 degrees C for up to 7 days. Cooking is pref. under reduced pressure at about 80 degrees and pref. solute is mainly sugar. |
