摘要 PURPOSE: A producing method of instant retort fotiaoqiang(Chinese shark fin soup) is provided to secure the texture of seafood ingredients after retort-sterilizing, by ice crystal control treating. CONSTITUTION: A producing method of instant retort fotiaoqiang comprises the following steps: washing seafood ingredients, selecting, and cutting before dipping into a sugar solution; rapidly freezing the seafood ingredients, and freeze-storing; dissolving the frozen seafood ingredients, and blanching; blanching other solid ingredients; adding a thickener to control the viscosity, and adding the blanched solid ingredients to make a fotiaoqiang soup solution; homogenizing the solution and sterilizing; packing the fotiaoqiang soup solution with a retort pouch; and retort-sterilizing the fotiaoqiang soup solution pouch.
