<p><P>PROBLEM TO BE SOLVED: To provide a method for producing a high-quality refined Sake, which enables brewing of refined Sake having good taste and flavor without excessively increasing milling rate of rice for Sake, preventing contamination with sundry germs in treatment steps from rice steaming to cooling, and easily operable without necessitating skilled labor. <P>SOLUTION: The refined Sake having excellent taste and flavor can be produced by controlling the temperature of rice steaming to 105-130°C, preferably 115-130°C, more preferably 120-125°C, and producing the refined Sake by using the obtained steamed rice. <P>COPYRIGHT: (C)2011,JPO&INPIT</p> |
