PURPOSE:To obtain a nutrient material containing various characteristic nutrients of an animal head without loss, by thermally dehydrating a raw material collected from the head of an animal under two-stage evacuation condition using hot oil as the thermal medium and deoiling the product under reduced pressure. CONSTITUTION:The raw material collected from the head of an animal is thermally dehydrated under slight vacuum condition and then high vacuum condition using a hot oil as the thermal medium, and the dehydrated product is successively deoiled under reduced pressure. The hot oil is animal oil, vegetable oil, mineral oil, etc., or their mixture, and the heating temperature is about 60-120 deg.C. The thermal dehydration treatment is carried out under slightly evacuated condition (e.g. vacuum of about 10-20mmHg gauge) to facilitate the thermal coagulation of proteins, etc., in the first 30min or thereabout, and then under high vacuum condition (e.g. vacuum of about 740-750mmHg gauge) for about 60min to a water-content of about 3-6%. The deoiling treatment is carried out by placing the raw material in a basket made of fine metallic mesh, immersing the material in a hot oil to effect the dehydration of the material, and discharging the hot oil from the cooker after the completion of the dehydration. |
