PURPOSE: A producing method of antimicrobial ice using a chitoic acid solution is provided to prevent the growth of bacteria inside ice and ice creams using chitoic acid with the antibacterial activity. CONSTITUTION: A producing method of antimicrobial ice using a chitoic acid solution comprises the following steps: washing crap shells with organic acid, drying, and crushing to make 100g of powder; inserting 00g of powder per 500g of acetic acid, and stirring to make 1,000g of chitoic acid solution; inserting 50g of chitoic acid solution to 1,000ml of water to make 1,000g of chitoic acid composition solution for the ice; and producing the ice with the chitoic acid composition solution. |
