PROBLEM TO BE SOLVED: To provide an evaluation method which uses a quantitative index of cockling corresponding to a sensual evaluation result, to provide an image forming method using the same, and to provide an image forming apparatus and a printed matter. SOLUTION: In the evaluation method of the printed matter, an extreme value point is extracted from profile data which shows a sectional profile of a waving shape of the printed matter, a position differenceΔx and a height differenceΔz are obtained between adjacent two extreme value points, an aspect ratioΔz/Δx of what satisfies a predetermined threshold or larger set in each of the position differenceΔx and height differenceΔz is calculated, a sum of the aspect ratios per unit length is obtained, and cockling is evaluated by whether the sum of the aspect ratiosΔz/Δx per unit length is large or small.
