METHOD FOR PRODUCING HYDROLYZATE OF MOLLUSCS

A method for producing hydrolyzate of molluscs provides for chopping the molluscs, separating the intersticial fluid, freezing thereof and introducing into the hydrolyzate prior to pasteurizing. The neutralization of the mussel hydrolyzate is carried out by acetic acid up to pH 7.0, and then fermenting the hydrolyzate is carried out by adding the baker's yeast culture at a ratio of masses of 1: 5 at a temperature of 36 °С and constant aeration of the solution in the course of 24 hours.
