A process for delaying the formation and/or reducing the tendency to agglomeration of hydrates in conditions in which a hydrate can form, these hydrates being formed from water and gas. The process is characterised especially in that an additive is employed comprising at least one compound from the group of esters of polyols and of substituted or unsubstituted carboxylic acids. Application of the process according to the invention to processes employing gases and water, forming hydrates with each other, especially in the oil or gas industry.
