摘要 PURPOSE: A method for making liquor using arginase-deleted mutant strain, Saccharomyces cerevisiae JY215 is provided to reduce use amount of cooling water and to enhance ethanol fermentation productivity. CONSTITUTION: An arginase-deleted mutant strain, Saccharomyces cerevisiae JY215(KACC 93079P) is obtained by treating Saccharomyces cerevisiae JY174(Corp. Jinro) parent strain with a mutagen to obtain a first candidate mutant strain, obtaining a second candidate mutant strain in which arginase activity is suppressed, and comparing ethanol fermentation ability at 38°C. A liquor is produced by ethanol fermentation of starch and saccharide ingredient using Saccharomyces cerevisiae JY215(KACC 93079P). The liquor is medicinal liquor, coarse liquor, fruit wine or soju.
