PURPOSE: A method and a device for preventing the acidification of cooking oil are provided to prevent the oxidation of cooling oil by preventing the cooking oil from making contact with the air since a layer of carbon dioxide is formed on the surface of the cooking oil. CONSTITUTION: A method for preventing the acidification of cooking oil is as follows. Inert gas is supplied to the upper end of a frying barrel(10), which holds cooking oil(11), a layer of inert gas(20) is formed on the upper part of the frying barrel and thus the direct contact between the cooking oil and the air(14) is blocked. The inert gas is heavier than the air. Carbon dioxide is used as the inert gas. |
