PURPOSE:To effectively mature dry fine noodles for a short period by placing the dry fine noodles in an ethyl alcohol gas barrier container, directly applying ethyl alcohol to the fine noodles, etc., and subsequently storing the resultant noodles for a specific period at the ordinary temperature. CONSTITUTION:Dry fine noodles (e.g. hand-made vermicelli or mechanically prepared iced noodles) are bound, placed in a container or bag having an ethyl alcohol barrier property, directly sprayed with an aqueous solution of ethyl alcohol (e.g. 75% ethyl alcohol solution) or placed together with an aqueous ethyl alcohol solution and with a porous material (e.g. a card-like article produced by laminating a polyethylene film to one surface of boxboard and subsequently opening many <=1mm fine holes in the laminated polyethylene film at intervals of 1cm), sealed and subsequently stored at the ordinary temperature for approximately one month for the objective maturation of the noodles. |
