摘要 PURPOSE: A producing method of noodles is provided to reduce the producing time of the noodles by cooking the noodles with high temperature steam while compressing kneaded ingredients. CONSTITUTION: A producing method of noodles comprises the following steps: crushing brown rice, grinding raw yam, and preparing sea tangle extract(S1); mixing 70wt% of crushed brown rice, 27wt% grinded raw yam, and 3wt% of sea tangle extract, and kneading(S2); rolling the obtained dough with a pressing roller to form a thin sheet shape, and steaming at the same time(S3); and cutting the sheet shaped dough into a noodle shape, and drying with cool air(S4).
