<p>The machine (1) has a rotative disk for supporting Belgian endives (E). A cutting mechanism (4) is placed parallely and near the disk for cutting a root crown (CL) and separating the edible chicory from the root (R) of Belgian endive. A pushing and maintaining equipment (8) is located in upstream part of the mechanism so as to press each Belgian endive towards a base (3G) of respective notch (3B) in the disk by elastic action, during rotation of the disk. The equipment is pushed back by the Belgian endive, when the endive is located opposite to the mechanism by the rotation of the disk.</p>
