The embodiments of the present invention relate to a method, a device and a system for determining and maintaining quality of service (QoS) parameters of multi-hop network. The method for determining the QoS parameters of multi-hop network includes: during data transmission process on the data transmission path from a user equipment to a base station, acquiring the QoS parameters statistics value of relay link on the transmission path; according to the QoS parameters statistics value of the relay link, and combining the QoS parameters to be maintained on the transmission path and air interface topology information on the transmission path, determining the QoS parameters, to be acquired, of access link and relay link on the transmission path. The method for maintaining QoS of multi-hop network includes: during data transmission process on the data transmission path from a user equipment to a base station, receiving QoS parameters to be acquired by a local hop link from the base station; according to the received QoS parameters to be acquired by the local hop link, acquiring the QoS parameters to be maintained by the local hop link and scheduling and deciding the local hop link to maintain QoS of a service stream corresponding to the QoS parameters.
