PURPOSE: A producing method of food by inserting salted pollack roe into mitra squids is provided to protect the shape after cooking, and to secure the low salinity. CONSTITUTION: A producing method of food by inserting salted pollack roe into mitra squids comprises the following steps: mixing 100parts of pollack roe by weight, 3~8parts of edible salt by weight, 40~60parts of water by weight, and 1~3parts of first seasoning liquid by weight(S320); removing intestines and foreign materials from the mitra squids and the pollack roe; adding 15~25parts of second seasoning liquid by weight to 100parts of pollack roe by weight(S330); aging and fermenting the mixture for 24~72hours at 0~5deg C(S340); injecting the pollack roe into bodies of the mitra squids(S350); and rapidly freezing the mitra squids(S470).
