PURPOSE: A producing method of salted mackerel using a mustard leaf extract is provided to dip the mackerel to the mustard leaf extract for removing the fishy smell from the mackerel. CONSTITUTION: A producing method of salted mackerel comprises the following steps: grinding mustard leaves to make an extract; melting mackerels; cutting the mackerels, and removing intestines and gills; adding salt and a salt solution to the mustard leaf extract; dipping the dressed mackerels into the mustard leaf extract; and vacuum packing the mackerels. |
