PROBLEM TO BE SOLVED: To provide a method for producing a purified tea extract having good flavor reduced in a harsh taste by removing the harsh taste from the tea extract.SOLUTION: The method for producing the purified tea extract includes: (1) a step for adding ethylenediamine tetraacetic acid or a salt thereof to the tea extract, (2) a step for bringing the tea extract mixture to contact with a synthetic adsorbent, (3) a step for eluting ethylenediamine tetraacetic acid or the salt thereof with water or an aqueous organic solvent solution having <5 mass% organic solvent concentration, and (4) a step for eluting non-polymeric catechins with an aqueous organic solvent solution with 10-70 mass% organic solvent concentration, wherein the steps are sequentially carried out. |
