PURPOSE: A pineapple coating liquid composition is provided to maintain the quality of pineapple flesh using a natural fungicide and a natural anti-oxidant. CONSTITUTION: A pineapple coating liquid composition contains the following: a cinnamon extract as a fungicide; a sophora flavescens aiton extract as an antioxidant; phosphous lipid, aliphatic acid, or polyoxtethylene sorbitan monooleate as an emulsifier; and water as an extender. The sophora flavescens aiton extract is obtained by using 50~80% of ethanol.
