PROBLEM TO BE SOLVED: To provide a collagen processed food easily crushable in mouth to enjoy crispy texture, good meltability not to stick to the teeth, variously seasoned and molded into various shapes for easy oral ingestion, and having a good ingestion efficiency of collagen.SOLUTION: The processed food is obtained by forming bubbles in a mixed solution of gelatin having a jelly strength of 60-320 g and a viscosity of 2.0-7.0 mPa s, and collagen peptide of a kinematic viscosity of 1.1-5.0 mm/s, gelatinizing and forming the product followed by drying, and adjusting an apparent density to 0.2-0.7 g/cm. A method for producing the processed food is also provided. |
