PURPOSE: A producing method of bread is provided to add steamed grain rice for improving the palatability of the bread, and to prevent the generation of bacteria. CONSTITUTION: A producing method of bread comprises the following steps: mixing 100parts of grains by weight, 5~6parts of salt by weight, 10~15parts of sugar by weight, and 690~710parts of water, and steaming the mixture; mixing the steamed grain rice, flour, dry yeast, the salt, the sugar, dried whole milk, processed butter, and the water; dividing the obtained dough into a fixed size; rapidly freezing the divided dough, and storing at -18deg C: and melting the dough, and inserting the dough into a bread pan for fermenting at 36~38deg C. |
