The present invention includes novel soybean derived human thyroglobulin, methods of producing human thyroglobulin in plants such as soybean, and novel diagnostic applications for the detection and stratification of endocrine malignancies including thyroid cancer and thyroiditis. The invention also includes the use of soybean-derived human thyroglobulin in affinity matrices to remove autoreactive anti-thyroglobulin antibodies from patient's sera prior to analyses.
