PROBLEM TO BE SOLVED: To accurately measure the texture of a food, such as "crunchiness" and "crispness".SOLUTION: A probe is inserted into a food to be measured at a predetermined insertion speed, and oscillations generated during the insertion are obtained. A filtering process is performed on waveform data relating to the oscillations, and waveform data in two or more frequency bands are obtained. Amplitude densities per unit time relating to the waveform data corresponding to respective frequency bands are then obtained, and the texture of the food is measured from the amplitude densities in respective frequency bands. |
