摘要 FIELD: food industry. ^ SUBSTANCE: group of inventions relates to the manufacturing technique of dietary flour confectionary products for nutrition of diabetes patients. Method provides for preparation of formula components, cutting of yacon, its drying in microwave field at specified parametres of the process, additional drying by convective method and cryo-grinding in liquid nitrogen to produce flour. Then one performs production of dough from prime wheat flour, flour produced from yacon using described technology, yolks, salt, soda, vegetable oil, phospholipids and water taken as per specified ratio, its moulding in the form of sheets and baking. One performs extraction of extraction of cumquat peel by liquid nitrogen with separation of the respective miscella, cutting of girasol or girasol-sunflower or yacon or chicory, its drying in the microwave field under specified process parametres, frying, impregnation with the separated miscella with simultaneous increase of pressure. Then one performs pressure reduction down to the atmospheric one with simultaneous freezing of raw material and its cryomilling in the medium of released nitrogen to make flour, mixing of the latter with cooking fat, sweetener "Sladex" and waffle crumbs to make filling, and forming waffles from the sheets and filling. ^ EFFECT: diabetic waffles have improved texture, coffee taste and flavour with no coffee added to the formula. ^ 4 cl
