FIELD: food industry. ^ SUBSTANCE: group of inventions is intended for use in production of dietary flour confectionary products for nutrition of diabetes patients. Methods envisage making waffles from sheets and filling. In the process of sheets production one performs girasol cutting, its drying in the microwave field, additional drying by convective method and cryogrinding in liquid nitrogen with the production of flour, making of dough from high-grade wheat flour, girasol flour produced as described above, yolks, salt, soda, vegetable oil, phospholipids and water, its moulding into sheets and baking. In the process of filling preparation one performs extraction of grapefruit peel by liquid nitrogen with corresponding miscella separation, cutting of girasol or girasol-sunflower or yacon or chicory, its drying in microwave field at preset process parametres, frying, impregnation with separated miscella with simultaneous increase of pressure, pressure reduction to atmospheric level with simultaneous freezing of raw material and its cryo-grinding in medium of released nitrogen to produce flour, its mixing with culinary fat, sweetener "Sladex" and waffle crumbs to make filling and making waffles from the sheets and filling. ^ EFFECT: diabetic waffles have improved texture, coffee taste and flavour with no coffee added to the formula. ^ 4 cl |
