Non-gluten spore or moldy culture of the Penicillium roqueforti genus for forming blue streaks in cheeses meant for persons suffering from Coeliac disease is obtained by growing in a non-gluten culture substrate. The spore suspension obtained with the substrates additionally undergoes enzymatic treatment.
