FIELD: food industry. ^ SUBSTANCE: method of diabetic waffles production (versions). Group of inventions relates to the manufacturing technique of dietary flour confectionary products for nutrition of diabetes patients. The methods envisage preparation of formula components, cutting of chicory, its drying in microwave field at specified parametres of process, frying and cryo-grinding in liquid nitrogen to produce flour. Then one performs production of dough from prime wheat flour, flour produced from chicory using described technology, yolks, salt, soda, vegetable oil, phospholipids and water taken as per specified ratio, its moulding in the form of sheets and baking. Then one performs extraction of extraction of grapefruit peel by liquid nitrogen with separation of the respective miscella, cutting of girasol or girasol-sunflower or yacon or chicory, its drying in the microwave field under specified process parametres, frying, impregnation with the separated miscella with simultaneous increase of pressure. Then follows pressure reduction down to atmospheric value with simultaneous freezing of raw materials and its cryo-grinding in medium of released nitrogen to produce flour. Then one mixes flour with culinary fat, sugar substitute "Sladeks" and waffle crumb to make filling, and making waffles of sheets and filling. ^ EFFECT: produced diabetic waffles have improved consistency and coffee taste and flavour with no coffee added to the formula. ^ 4 cl |
