PURPOSE: Low temperature aged citron syrup, and a producing method thereof are provided to prevent the loss of the flavor, the taste, the color, and nutrients inside citrons. CONSTITUTION: A producing method thereof of low temperature aged citron syrup comprises the following steps: washing, cutting, and juicing citrons(S2,S3); mixing the citron juice with sugar with a weight ratio of 1:1.1, and melting the sugar for 24hours at 5~16deg C(S4); low temperature aging the obtained citron syrup for 7~10days(S5); stirring the citron syrup for one hour before packing(S6); and long-term storing the citron syrup(s7).
