PURPOSE: A cooking oil refining apparatus and a method thereof are provided to prevent the acidification and the chemical transformation of cooking oil, and to reduce the generation of waste cooking oil. CONSTITUTION: A cooking oil refining apparatus comprises the following: a pumping member(10) generating power for circulate-refining high temperature cooking oil stored inside a cooking oil heating container(110); an inflow line(42) with one side connected to the cooking oil heating container and the other side connected to an inlet of the pumping member; a cooking oil refining line(40) including an outflow line(44) with one side connected to the outlet of the pumping member, and the other side connected to the cooking oil heating container; and a refining member(20) recycling the high temperature cooking oil into high purity cooking oil.
