PURPOSE: A method for producing persimmon wine is provided to prevent damage of nutrition contained in persimmon during wine production. CONSTITUTION: A method for producing persimmon sine comprises: a step of freezing persimmon at -35°C to -25°C(110); a step of thawing persimmon at room temperature(120); a step of sterilizing liquid generated during thawing persimmon(130); a step of adding yeast to the sterilized liquid and fermenting(140,150); and a step of maturing the fermented liquid(160). |
