PURPOSE: An oil composition with the high diglyceride content is provided to prevent the generation of bad smell when cooking diglyceride, by combining diglyceride containing oil with a specific functional group. CONSTITUTION: An oil composition contains the following: 100parts of fat by weight containing 60~100wt% of diglyceride with 80~100wt% of unsaturated fatty acid content; 0.001parts of carboxylic aid by weight selected from the group consisting of hydroxycarboxylic acid with 2~8 carbons, dicarbonic acid, tri-carboxyclic acid, their salt, and their derivatives; 0.001~5parts of antioxidant by weight; and 0.05~4.7parts of plant sterol class by weight. |
