METHOD FOR PREPARING RICE MILK WITH HIGH PROTEIN CONTENT

PURPOSE: A producing method of rice milk with the high content of protein is provided to increase the carbohydrate and protein content of the rice milk by a protein water-solubilization process of lees and rice bran. CONSTITUTION: A producing method of rice milk with the high content of protein comprises the following steps: roasting, crushing and gelatinizing rice; liquidifying the gelatinized rice with alpha-amylase; saccharifying the liquidified rice using a saccharifying enzyme to obtain a rice milk extract; roasting, crushing and gelatinizing rice bran or lees; liquidifying the gelatinized rice bran or lees; saccharifying the liquidified rice bran or lees; adding proteinase and NaOH or HCl for a reaction; centrifugal separating the reaction solution and obtaining supernatant; forming a condensed product of rice protein; and mixing the rice protein condensed product with the rice milk extract.
