PROBLEM TO BE SOLVED: To provide a method for producing edible oil suspension highly containing trans-carotene comprising efficiently isomerizing carotene in highly-safe natural substance-based edible oil to an E-body (trans body) from a Z-body (cis body) so as to highly contain the E-body (trans body) without raising viscosity.SOLUTION: The method for producing edible oil suspension highly containing trans-carotene includes stirring carotene-containing edible oil with power requirement for stirring of 2-9 kW/mper unit volume while heating the carotene-containing edible oil at ≥50°C.
