PURPOSE: A producing method of bad-smell removed mutton using a phellinus linteus extract is provided to improve the flavor and the taste of the mutton by aging the mutton inside the phellinus linteus extract. CONSTITUTION: A producing method of bad-smell removed mutton using a phellinus linteus extract comprises the following steps: slicing 1,000g of mutton and naturally melting(a); mixing 40~50g of aging material, and 150g of drinking water to make an aging solution(b); adding the mutton and 10g of phellinus linteus extract to the aging solution, and low temperature-aging for 10hours(c); removing the aging solution(d); spraying 15g of pyroligneous liquor to the aged mutton(e); aging the mutton for 12hours(f); and freezing the mutton(g). |
