PURPOSE: Soybean paste and soy sauce using aged black garlic, and a producing method thereof are provided to offer active ingredient and the taste of the aged black garlic to the soybean paste and the soy sauce. CONSTITUTION: A producing method of soybean paste and soy sauce using aged black garlic comprises the following steps: producing crushed aged black garlic and an aged black garlic extract; washing soy beans and soaking(S100); mixing the soaked soy beans and the crushed aged black garlic, and boiling(S200); making soybean blocks with the boiled mixture, injecting koji mold, and drying the block(S300); adding bay salt water to the dried soybean blocks and firstly fermenting(S400); separating the soybean blocks from the salt water(S500); and adding 1~3wt% of aged black garlic extract for secondly fermenting(S600,S700). |
