PROBLEM TO BE SOLVED: To provide a method of producing fat by a transesterification reaction with lipase having a 1,3-position specificity between a raw fat having a specific saturated fatty acid content and a raw fatty acid having a specific unsaturated fatty acid content or a lower fatty acid ester thereof, with which method a fat rich in USU can be produced at a commercially available low level.SOLUTION: A fat containing C20 to C24 saturated fatty acids can be used as a raw fat so that C20 to C24 saturated fatty acids originated from the raw fat and unreacted C16 to C18 unsaturated fatty acids or lower fatty acid esters thereof can be separated by a distillation using differences in boiling point between them, and the obtained unreacted C16 to C18 unsaturated fatty acids or lower fatty acid esters thereof can effectively be reused as raw fatty acids or raw lower fatty acid esters.SELECTED DRAWING: None |
