The process for making food products based on surimi, comprises obtaining a strip of surimi, depositing a fodder product having cheese close to an edge of the surimi strip (11) using a pump with constant flow, rolling the surimi strip around the fodder product to form a stuffed surimi roll (12), packing the roll in a plastic film that forms a sheath around the roll, cutting up the roll to form fingers of stuffed surimi, and pasteurizing the surimi fingers. The roll is stretched to increase its length for 10% during packing and cutting the roll. The packing of roll in the plastic film comprises arranging the plastic film around the roll and sealing at a distance of 3 mm over the film. The roll is cut using a blade forming an angle perpendicular with a direction of movement.
