PROBLEM TO BE SOLVED: To provide a method for producing alcohol-containing sweet seasoning by using nonglutinous rice as a raw material but not a conventionally used glutinous rice, which does not need rice grinding and avoids starch aging so as to produce high-quality alcohol-containing sweet seasoning.SOLUTION: The method for producing alcohol-containing sweet seasoning includes using nonglutinous rice with which a highly heat-resistant or moderately heat-resistant α-amylase is brought in contact or by which the amylase is adsorbed, followed by seaming as a raw material replacing glutinous rice. The method for producing alcohol-containing sweet seasoning includes using dried nonglutinous rice as a raw material. |
