PURPOSE: A producing method of fresh fruit and vegetable juice is provided to minimize the loss of bioactive substances and nutrient components from fruits and vegetables. CONSTITUTION: A producing method of fresh fruit and vegetable juice comprises the following steps: selecting fruits and vegetables, washing, and milling; adding antioxidants including vitamin C, and forming corpuscles with the size of 1~150micrometers using a colloid mill or a stone mill; filtering, dehydrating, and precipitating the obtained ultra-fine pulverized material with a centrifuge for 5~15minutes to separate insoluble materials removing micro-bubbles from the ultra-fine pulverized material; uniformly dispersing solid portions with a high-pressure homogenizer; and sterilizing the pulverized material after inserting into a juice container.
