PROBLEM TO BE SOLVED: To provide a method for producing a kind of solid confectionery comprising Jerusalem artichoke by using Jerusalem artichoke powder.SOLUTION: The method comprises the following process: for eliminating a disadvantage inherent in a Jerusalem artichoke material, i.e. softening and discoloring in a short time, the material is washed, dried and sliced by a swift means; the resultant slices are then pulverized, humidified and then baked. The objective solid confectionery is thus produced using the technique. By making Jerusalem artichoke that has blood glucose level-suppressive effect and is rich in inulin as an ingredient activating the digestive function in the gastrointestinal system into such a kind of solid confectionery, the confectionery is beneficial to human health promotion as it is eatable easily and inexpensively. |
