Jam; marmalade.-In the manufacture of jams, marmalade, conserves. confectionery &c., the sugar is added in the form of an aqueous solution, containing, preferably, 40 per cent or more of sugar, obtained by lixiviation or diffusion treatment of sugar beet. The sugar solution may be obtained by diffusion treatment of dried cossettes of beet, the solution being concentrated until its sugar content is about 40 per cent, clarified, e.g. by filtration, and subjected to a lime or other treatment to remove albumenoids, the purification being effected so as completely to clarify and decolorize the solution and remove suspended impurities. Reference has been directed by the Comptroller to Specifications 136,205, [Class 28 (i), Bread-making &c.], 147,838 and 148,407. |
