Use of isopropylmethylcyclohexene-thiol compounds (A), preferably 1-para-menthen-3-thiol, 1-para-menthen-4-thiol, 1-para-menthen-5-thiol, 1-para-menthen-6-thiol and/or their stereoisomers, as a fragrant or flavor substance for imparting, modifying and/or intensifying one, two or all the smell and/or taste notes of grapefruit, tropical fruits and blackcurrant, is claimed. Use of isopropylmethylcyclohexene-thiol compounds of formula (A), preferably 1-para-menthen-3-thiol, 1-para-menthen-4-thiol, 1-para-menthen-5-thiol, 1-para-menthen-6-thiol and/or their stereoisomers, as a fragrant or flavor substance for imparting, modifying and/or intensifying one, two or all the smell and/or taste notes of grapefruit, tropical fruits and blackcurrant, is claimed. Independent claims are included for: (1) the compounds (A), preferably 1-para-menthen-5-thiol and 1-para-menthen-6-thiol; and (2) a fragrant or flavor composition comprising (A) or a mixture of two or more of (A) and 1-3 or more further fragrance(s) and/or flavor(s), with the proviso that the fragrant or flavor composition comprises neither para-menthene thiol-1,8 nor 1,8-epithio-para-methane, and that the fragrant or flavor composition in the presence of hexane and/or ethyl acetate comprises the further fragrant and/or flavor substance, where the further fragrant and/or flavor substance is/are not (A).
