PURPOSE: A producing method of pretzel by rapidly freezing is provided to mass-produce the pretzel, and to easily maintain the freshness of the pretzel. CONSTITUTION: A producing method of pretzel comprises the following steps: mixing yeast water and a premix to form dough before fermenting; adding a filling inside the fermented dough and molding with a molding device; roasting the molded dough in an oven, and cooling at room temperature; and rapidly freezing the roasted dough. The yeast water contains water and yeast in a mixture weight ratio of 1:0.012~0.02. |
