FIELD: food industry. ^ SUBSTANCE: invention relates to the manufacturing technique of coffee substitutes. The proposed preserve preparation method includes the following operations. Dandelion roots are pre-processed according to the traditional technology. Prepared dandelion roots are cut and dried in microwave field at preset process parametres. Then dandelion roots and grape seeds are fried according to traditional technology. Fried dandelion roots and grape seeds are mixed in a weight ratio of 7:3 and cryomilled in liquid nitrogen to produce the target product. ^ EFFECT: method makes it possible to produce coffee drink from non-traditional raw materials according to wasteless technology. |
