摘要 PURPOSE: A preparation method for kimchi using ramie is provided to add the taste, flavor and effective component to kimchi using ramie extract. CONSTITUTION: A preparation method for kimchi using ramie comprises the steps of: performing hot water extraction of ramie root at 100-120°C for 5-10 hours to prepare ramie extract; preserving a material salty water; mixing ramie powder and wheat flour with the ramie extract and heating the mixture to prepare ramie paste; mixing the ramie paste with various kinds of spices in a weight ratio of 1:0.02-0.04 to prepare Kimchi spice; mixing Kimchi spice with preserved raw material in a weight ratio of 1:0.3-0.5; and aging Kimchi.
