Shaker with adjustable stiffness for harvesting machines, especially grape harvesters, comprises two berry detaching assemblies facing each other with each assembly including a plurality of vertically spaced out flexible shakers 5 having the general shape of a hairpin and two branches 5a, 5b connected through a curved portion 5c. The end of one branch, the activation branch 5a connects to an actuation system 6 while the end of the other branch 5b connects to a fixed support 8. The activation branch 5a is equipped with a mechanism 5g to modify the degree of stiffness or flexibility of the branch over at least a portion of its length, and thereby, to adjust the degree of stiffness or flexibility of the shaker assembly.
