摘要 <p><P>PROBLEM TO BE SOLVED: To provide a device and method for evaluation of freshness, capable of easily and rapidly performing objective freshness evaluation of a specimen comparing with a conventional art. <P>SOLUTION: A contrast value C calculated on the basis of fishes and shellfishes 10 having high freshness and low turbidity is lower than the contrast value C calculated on the basis of the fishes and shellfishes 11 having low freshness and high turbidity, so that this freshness evaluation device 4 can determine the freshness of fishes and shellfishes 10 and 11 based on the contrast values C. Thus, the freshness evaluation device 4 can perform the objective freshness evaluation of the specimen 9 based on the contrast values C where the freshness is digitized, and can perform the freshness evaluation based on a predetermined arithmetic processing simply by imaging a stripe pattern image generated by near-infrared light L<SB>1</SB>radiated to the specimen 9, so that the freshness evaluation can be performed easily and rapidly comparing with the conventional art. <P>COPYRIGHT: (C)2011,JPO&INPIT</p>
