PURPOSE: A producing method of picked crustacean food including spicy raw crab is provided to improve the quality of the food, and to reduce the salinity. CONSTITUTION: A producing method of picked crustacean food comprises the following steps: selecting a crustacean and washing and cleaning(S1); branching the washed crustacean; and dipping the branched crustacean into sauce for the fermentation(S3). The cleaning process includes a process of boiling the crustacean in boiling water for 5~10 seconds, and cooling in ice water(S2). |
