PURPOSE: A method for preparing rice bran-derived protein hydrolysate with rich glutamic acid content is provided. CONSTITUTION: A method for preparing rice bran-derived protein hydrolysate with rich glutamic acid comprises: a step of adding protein to rice bran water-dispersion liquid to obtain a hydrolysate; a step of adding magnesium chloride to the hydrolysate and precipitating to correct precipitate solid powder; a step of culturing koji mold of Aspergillus oryzae or Aspergillus sojae to obtain culture; and a step of dispersing the solid powder in the water and adding culture to the dispersed liquid.
