The present invention relates to a method for detecting substantially intact capsule-forming or non-capsule-forming parasites in meat, which method involves macerating the meat with a basic digestive solution containing a digestive enzyme which is active in the basic medium. Uses of a serine endopeptidase in a method for detecting substantially intact capsule-forming or non-capsule-forming parasites in meat are also described. The present invention also describes serine endopeptidases for use in a diagnostic method for detecting substantially intact capsule-forming or non-capsule-forming parasites in meat. Finally, a kit comprising the enzymes and basic digestive solutions of the present invention is disclosed.
